This Friday’s featured recipe includes a list of healthy dinners in under 30 minutes! We know that many of you enjoy to gather around the dinner table with healthy dinners. However, we also know that preparing dinner can sometimes be quite lengthy. Throw in trying to prepare a fresh and healthy dinner and you may spend hours in the kitchen! This is why we have compiled healthy and fast dinners for you to try. Because we know that eating healthy doesn’t have to be time consuming. (Please note these recipes do not belong to LTC TREE).
Chicken Rice Bowl
Ingredients
- 1/4 cup rice vinegar
- 1 green onion, minced
- 2 tablespoons reduced-sodium soy sauce
- 1 tablespoon toasted sesame seeds
- 1 tablespoon sesame oil
- 1 tablespoon honey
- 1 teaspoon minced fresh gingerroot
- 1 package (8.8 ounces) ready-to-serve brown rice
- 4 cups coleslaw mix (about 9 ounces)
- 2 cups shredded rotisserie chicken, chilled
- 2 cups frozen shelled edamame, thawed
Simple Steak Fajitas
Ingredients
- 1 beef top sirloin steak (3/4 inch thick and 1 pound)
- 2 tablespoons fajita seasoning mix
- 1 large sweet onion, cut crosswise into 1/2-inch slices
- 1 medium sweet red pepper, halved
- 1 medium green pepper, halved
- 1 tablespoon olive oil
- 4 whole wheat tortillas (8 inches), warmed
- Sliced avocado, optional
- Minced fresh cilantro, optional

Green Quesadillas
Ingredients
- 3 ounces fresh baby spinach (about 4 cups)
- 4 green onions, chopped
- 1 small tomato, chopped
- 2 tablespoons lemon juice

- 1/4 teaspoon garlic powder
- 1 cup shredded reduced-fat Monterey Jack cheese or Mexican cheese blend

Egg Roll Scramble
- 1 pound lean ground chicken
- 1-1/2 cups sliced fresh mushrooms
- 1 medium onion, chopped
- 2 garlic cloves, minced

- 1 package (14 ounces) coleslaw mix
- 1 tablespoon sesame oil

- 2 medium ears sweet corn, husked

- 1/2 teaspoon ground cumin

- 2 tilapia fillets (6 ounces each)
