Feature Friday Recipe: Healthy Holiday Edition

In honor of the quickly approaching holidays we have decided to feature four of our favorite and healthy holiday recipes, found online this week! Our holiday wish for you, is that you spend this holiday season surrounded by great friends, family, as well as healthy-ish delicious foods!
Healthier Green Bean Casserole (get full recipe here)
Ingredients:
- 3 to 4 medium shallots, in their skins
- Kosher salt, plus 1 1/2 teaspoons
- 1 pound fresh green beans, stemmed, and halved crosswise
- 1 tablespoon extra-virgin olive oil
- 8 ounces cremini mushrooms, sliced (about 4 cups)
- 2 tablespoons unsalted butter
- 3 tablespoons all-purpose flour
- 1 1/2 cups mushroom, vegetable, or chicken broth (see Cook’s Note)
- 3 teaspoons fresh thyme leaves
- Freshly ground black pepper
- Vegetable cooking spray
- 1 cup fresh bread crumbs

Ingredients:
- 1 pound beets, roots and stems trimmed
- 1/4 cup plus 3 tablespoons olive oil
- Salt and freshly ground black pepper
- 4 shallots, peeled and halved
- 2 oranges
- 2 tablespoons balsamic vinegar
- 1/4 teaspoon sugar
- 1/2 teaspoon Dijon mustard
- 12 ounces mixed greens
- 2 to 3 tablespoons salted sunflower seeds
Roasted Salmon with Citrus Salsa Verde (get full recipe here)
Ingredients:

1 shallot, very thinly sliced into rings

Finely grated zest from 1 orange, divided

- 1/4 cup unsweetened coconut
- 1 cup oven-toasted rice cereal
- 1 cup dried cranberries
- 1 1/2 pounds good-quality white chocolate, chopped
- 2 teaspoons vegetable oil
