This Friday's Featured recipe includes healthy side options you can easily combine with your meals for a complete and wholesome meal. Perhaps you've been here before with an excellent protein option in mind but no idea on which carbs, fats, and veggies to incorporate in order to complete your meal. Cranberry Wild Rice Pilaf
Ingredients:
- 3/4 cup uncooked wild rice
- 3 cups chicken broth
- 1/2 cup medium pearl barley
- 1/4 cup dried currants
- 1 tablespoon butter
- 1/3 cup sliced almonds, toasted
- 1/4 cup dried cranberries, chopped
Honey-Thyme Butternut Squash
Ingredients:
- 1 large butternut squash (about 5 pounds), peeled and cubed
- 1/4 cup butter, cubed
- 3 tablespoons half-and-half cream
- 2 tablespoons honey
- 2 teaspoons dried parsley flakes
- 1/2 teaspoon salt
- 1/8 teaspoon dried thyme
- 1/8 teaspoon coarsely ground pepper
Zucchini Mushroom Bake
Ingredients:
- 3 cups sliced zucchini
- 2 cups sliced fresh mushrooms
- 1/3 cup sliced onion
- 1/2 teaspoon dried basil
- 1/4 teaspoon salt
- 1/2 cup shredded cheddar cheese
Parmesan Potato Wedges
Ingredients:
- 1/4 cup grated Parmesan cheese
- 1 teaspoon garlic salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 1/2 teaspoon paprika
- 4 medium baking potatoes (about 8 ounces each)
- Cooking spray
Basil Corn & Tomato Bake
Ingredients:
- 2 teaspoons olive oil
- 1 medium onion, chopped
- 2 large eggs
- 1 can (10-3/4 ounces) reduced-fat reduced-sodium condensed cream of celery soup, undiluted
- 4 cups fresh or frozen corn
- 1 small zucchini, chopped
- 1 medium tomato, seeded and chopped
- 3/4 cup soft whole wheat bread crumbs
- 1/3 cup minced fresh basil
- 1/2 teaspoon salt
- 1/2 cup shredded part-skim mozzarella cheese
- Additional minced fresh basil, optional
Pesto Pasta & Potatoes
Ingredients:
- 1-1/2 pounds small red potatoes, halved
- 12 ounces uncooked whole grain spiral pasta
- 3 cups cut fresh or frozen green beans
- 1 jar (6-1/2 ounces) prepared pesto
- 1 cup grated Parmigiano-Reggiano cheese
