Cottage Cheese Pancakes
INGREDIENTS
- 1/2 cup old-fashioned oats
- 1/2 cup cottage cheese
- 2 large eggs
- 1/8 teaspoon kosher salt
- Maple syrup, jam, or sliced berries, for serving
Tomato Toast
INGREDIENTS
- Sliced heirloom tomatoes
- 1 large slice of sandwich bread
- 1 tablespoon cream cheese (Philadelphia regular worked well for us)
- 1/2 teaspoon fresh chives, rinsed and chopped
- Freshly ground black pepper, to taste
- Olive oil, to taste
Avo Egg Toast
INGREDIENTS
- 1 slice whole grain bread, toasted (1.5 oz)
- 1 oz mashed, 1/4 small haas avocado
- cooking spray
- 1 large egg
- kosher salt and black pepper to taste
- hot sauce, optional
Arugula Omelette
Ingredients

- 2 cups refrigerated or frozen egg product, thawed, or 8 eggs, lightly beaten
- ⅛ teaspoon ground pepper
- 1 cup torn fresh arugula or spinach
- 1 cup seeded, chopped tomato
- ½ cup crumbled reduced-fat feta cheese (2 ounces)
- ¼ cup pitted Kalamata olives, sliced
Kale Scramble
Ingredients
- 1/2 small sweet potato, diced
- 1 thin slice of a whole grain bread loaf
- 2 heaping cups of kale leaves
- 1 tablespoon extra-virgin olive oil, plus a little extra
- Dash of sea salt
- 1 clove garlic
- 2 free-range eggs
- Splash of white vinegar
- Juice of 1 lemon
- Pepper, to taste
