Soba Noodle Bowl with Garlic Shrimp and Miso Dressing
INGREDIENTS
- 2 1/2 cups soy bean sprouts
- 1 1/2 Tbsp sesame oil
- 2 tsp rice wine vinegar
- 1/2 tsp salt
- Pinch or 2 of gochugaru (Korean pepper flakes), optional
- 1/4 cup plus 1 Tbsp white miso paste
- 1/4 cup rice wine vinegar
- 2 cloves garlic, minced
- 2 Tbsp grated ginger
- 2 Tbsp fresh lime juice
- 1Tbsp mirin
- 1/4 tsp salt
- 2 Tbsp sesame oil
- 1/3 cup grapeseed oil, or other neutral oil
- 4 eggs
- 300 g (10.5 oz) package soba noodles
- Salt for boiling water
- 3/4 lb (340 g) shell-on shrimp (head removed)
- Salt for seasoning
- 2 Tbsp olive oil
- 2 Tbsp unsalted butter
- 2 cloves garlic, minced
- 12-15 steamed asparagus spears
- 2 radishes, julienned
- 1 avocado, sliced
- Black sesame seeds, to garnish
- Maldon sea salt, garnish
Asparagus and Smoked Salmon Bundles
INGREDIENTS
- 1 bunch asparagus, ends trimmed (about 20 spears)
- 2 Tbsp olive oil
- 1 Tbsp chopped fresh rosemary leaves
- 1 pinch kosher salt
- 1 pinch freshly ground black pepper
- 4 – 6 oz thinly sliced smoked salmon (1 slice per asparagus spear)
Sweet Potato and Sauerkraut Perogies
INGREDIENTS
- 3 cups all-purpose flour
- 1/2 tsp sea salt
- 1 cup water
- 2 Tbsp sunflower oil
- 1/4 – 1/2 cup all-purpose flour (for rolling out dough)
- 3 1/2 cups sweet potato, peeled and cubed
- 2 garlic cloves, minced
- 2 Tbsp nutritional yeast
- 2 Tbsp vegan butter or margarine
- 1/2 tsp dill
- 1/4 tsp sage
- 1/4 tsp sea salt
- 1/4 tsp ground pepper
- 1/3 cup sauerkraut
Kefir Coleslaw
INGREDIENTS
- 8 cups (2 L) thinly sliced cabbage
- 1 cup (250 mL) shredded carrots
- ¼ cup (50 mL) chopped fresh parsley
- 1 shallot, thinly sliced
- 1 cup (250 mL) PC Plain Kefir
- 2 Tbsp (25 mL) canola oil
- 2 Tbsp (25 mL) red wine vinegar
- 1 Tbsp (15 mL) honey
- ½ tsp (2 mL) salt
- ¼ tsp (1 mL) freshly ground black pepper
GUT HEALING CHICKEN BONE BROTH
INGREDIENTS
- About 3 lbs chicken bones (raw or cooked)
- enough water to cover the bones by 2 inches (about 3 quarts)
- 1 medium onion, chopped into large chunks
- 1 Tbsp apple cider vinegar
- 1 Tbsp minced garlic
- 1 Tbsp sea salt
- 4 bay leaves
- 2 tsp herbs de provence (optional)
