This Friday’s Featured recipe includes five delicious and healthy recipes which are easy to prepare in advance and enjoy the next day! Meal prepping made easy for you. (Please note none of these recipes belong to LTC TREE)
Superfood Salad (Full Recipe)
Ingredients:
- 1/2 cup dry quinoa, cooked according to package directions
- 1/2 cup frozen edamame, cooked according to package directions
- 1/2 bunch curly kale (about 4 to 5 cups), chopped or torn into bite-sized pieces with thick ribs removed
- 1/2 cup fresh blueberries
- 1/2 cup red grapes, halved
- 1/2 cup dried cherries, chopped if necessary (dried cranberries may be substituted)
- 1/3 cup feta, goat, or parmesan cheese, crumbled or shredded
- 1/4 cup sunflower seeds (I used unsalted)
- 1/4 cup walnuts, chopped (I used unsalted)
- 1/4 cup orange juice
- 2 tablespoons olive oil
- 1 garlic clove, finely minced or pressed
- 1 teaspoon granulated sugar
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon pepper, or to taste
- 1 heaping tablespoon Greek yogurt (I used 0% fat, sour cream may be substituted)
Honey Shrimp StirFry (Full Recipe Here)
Ingredients:
- 1 1/4 lbs large shrimp peeled and deveined
- 2 1/2 cups broccoli florets
- 2 teaspoons vegetable oil divided use
- 4 cloves garlic minced
- 1/4 cup water
- 1/4 cup low sodium soy sauce
- 3 tablespoons honey
- 2 teaspoons corn starch
- salt and pepper to taste
Bacon Cups (Full recipe here)
Ingredients:
- 12 strips sugar-free bacon (about 10 ounces)
- 2 red potatoes, sliced 1/8 inch thick, rounded ends discarded
- 1 small red bell pepper, finely chopped
- 12 large eggs
- 2 tablespoons chopped fresh chives
- Hot sauce, for serving
Lentil Sausage Soup(Full Recipe Here)
Ingredients:
- ½ teaspoon salt
1 Granny Smith apple, finely diced 2 stalks celery with leaves, finely diced 6 cups arugula or mesclun greens
Easy Veggie Quesadillas (Full Recipe)
Ingredients:
- 8 whole wheat large (8”) tortillas
- 14 oz can black beans, rinsed & drained
- 1 cup corn
- 1 large bell pepper, diced
- 1/3 cup cilantro, finely chopped
- 1/3 cup red onion, minced
- 2 tsp cumin
- Pinch of salt
- 2 2/3 cups cheese that melts well, shredded (cheddar, mozzarella)
- Salsa and yogurt, for serving
