This Friday’s featured recipe includes a list of our favorite healthy meals. We know that many of you have goals to stay healthy while keeping it tasty and easy. We have compiled some of the healthy meals we have tried. Try these out for yourself and let us know what you think on our page. (Please note these recipes do not belong to LTC TREE).
Corn and Tomato Fettuccini
INGREDIENTS:
- 8 ounces uncooked whole wheat fettuccine
- 2 medium ears sweet corn, husked
- 2 teaspoons plus 2 tablespoons olive oil, divided
- 1/2 cup chopped sweet red pepper
- 4 green onions, chopped
- 2 medium tomatoes, chopped
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup crumbled feta cheese
- 2 tablespoons minced fresh parsley
Apple Peanut Butter Wrap
INGREDIENTS:
- 2 tortillas, 6 inch
- 2 to 3 tablespoons peanut butter
- 1 medium apple, cut into thin slices
- 1 tablespoon mini chocolate chips
- 2 tablespoons granola
Honey Sriracha Chicken
INGREDIENTS:
- 2 pounds boneless, skinless chicken breasts
- ½ cup honey
- ¼ cup olive oil
- 2 tablespoons Sriracha
- Kosher salt
- Freshly ground black pepper
- 2 (6 ounce) boxes Uncle Ben’s® Long Grain and Wild Rice Original Recipe
- 2 avocados, sliced
- 1 bunch scallions, chopped
- Crumbled queso fresco
Mango Poke
INGREDIENTS:
- 2 tablespoons vegetable oil
- 1 tablespoon ponzu sauce
- 1/2 teaspoon prepared wasabi
- 4 ounces sushi grade tuna diced in large chunks
- 1/2 mango diced in large chunks
- 1/2 cup store-bought seaweed salad
- 1/2 teaspoon black sesame seeds
- 2-3 cups loosely packed spring lettuce mix
- 1/2 avocado sliced
- 1/4 teaspoon pink Hawaiian sea salt
Baked Peaches
INGREDIENTS:
- 3 medium peaches
- 2 tbsp. packed brown sugar
- 1/4 tsp. cinnamon
- Pinch nutmeg
- 3 tbsp. butter
- Vanilla ice cream, for serving
INGREDIENTS:
- 1 tablespoon olive oil
- 1 pound ground turkey
- ½ onion, finely chopped
- 2 cloves garlic, finely chopped
- ½ teaspoon cumin
- ½ teaspoon chili powder
- ½ teaspoon oregano
- 1¾ cups enchilada sauce or about 1 cup of homemade enchilada sauce
- Kosher salt and fresh cracked black pepper
- 8 (8-inch) flour tortillas
- 3 cups shredded Mexican blend cheese, or colby or Monterey Jack
