Zucchini Noodle Bowls ( Full Recipe Here)
Ingredients:
For the cilantro lime vinaigrette:
- 1 shallot minced
- 2 cups packed fresh cilantro leaves stems removed
- 1 large clove garlic
- 2 tablespoons red wine vinegar
- 1 tablespoon fresh lime juice
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup olive oil
For the bowls:
- 2 medium zucchini spiralized
- 1 ear corn
- 1 14 oz can black beans, rinsed and drained
- 1 cup halved grape or cherry tomatoes
- 1/4 red onion thinly sliced
- 1 large avocado sliced
- 1/4 cup queso fresco
- Cilantro for garnish
Taco Stuffed Zucchini Boats (Full Recipe Here)
INGREDIENTS:
- 3 medium sized zucchini, cut in half lengthwise
- 1/2 pound lean ground beef (90%/10%, grass-fed if possible)
- 1/3 cup diced onion
- 1 clove garlic, grated
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1/4 teaspoon oregano, rubbed between the palms of your hands
- Kosher salt and fresh ground black pepper to taste
- 4 ounce can diced green chiles
- 2 cups cauliflower rice
- 3/4 cup salsa, divided
- 1/2 cup shredded Colby Jack cheese, cheddar or pepper jack are also good
- 1/2 cup chopped tomatoes
- Cilantro for garnish
Honey Shrimp StirFry (Full Recipe Here)
INGREDIENTS:
- 1 1/4 lbs large shrimp peeled and deveined
- 2 1/2 cups broccoli florets
- 2 teaspoons vegetable oil divided use
- 4 cloves garlic minced
- 1/4 cup water
- 1/4 cup low sodium soy sauce
- 3 tablespoons honey
- 2 teaspoons corn starch
- salt and pepper to taste

- 4 boneless chicken thighs
- Kosher salt and black pepper
- 2 tsp. canola oil
- 12 oz. small carrots
- 1 (5.8-oz.) box of olive oil and herb couscous
- 1/3 c. chopped fresh flat-leaf parsley
- 1/3 c. roasted salted pepitas
- 1/4 c. Chopped fresh mint
- 1 finely chopped garlic clove
- 1 tbsp. olive oil
- 1 tbsp. lemon juice
- 2 tsp. lemon zest
